5 Min Dinner Inspiration

  •  1 courgette, spiralised (if you don't have a spiraliser, use your peeler to create ribbons)
  • 'Olive tofu' (you can buy it in Waitrose) sliced
  • Cherry tomatoes, halved
  • 1 Tbsp olive oil
  • Sprinkle of feta (optional)

  1. Heat your oil in a pan and throw your tofu in
  2. Once your tofu has browned, toss in your courgetti and tomatoes and cook until soft
  3. Serve with a sprinkle of feta if using.
  4. Et voila!
